Let me just start by making this assertion: I LOVE PLANTAIN!! No, you don’t understand! I ABSOLUTELY LOVE PLANTAIN! I don’t want to bore you with all my childhood tales. But when I was growing up, boiled white rice, plantain and fish/beef was a Sunday afternoon ritual after church. It was something I looked forward to a lot. So much that after I had eaten my meal, I would go and sit by my dad, just because I knew he would give me one or two extra slices of plantain. In fact, I’ve bitten my tongue more than five times because of plantain. I really could eat a truckload of plantain.

Plantain is rich in vitamins A, B6 and C. Vitamin A is essential for eye health. Enough consumption of vitamin A will give you bright eyes, better vision, less eye infections and less dark circles. Vitamin B6 is essential for curing anemia which is a medical condition where someone has low red blood cells. In the long run, low blood cells causes weakness. That you don’t have anemia doesn’t mean you should stay away from plantain. Eating plantain can help your red blood cells to stay healthy and strong.
